 “Almond Joy” Coconut Almond Bites

Makes 10 Bites

Time: 20 min (plus chilling time)

 

Ingredients:

1 cup (240ml) Unsweetened Shredded coconut

1 tbsp (15 ml) Maple Syrup

2 tbsp (30 ml) Coconut oil

1 tsp (5ml) Vanilla

⅓ c. (80 ml) Chopped almonds + 5 almonds, halved for decoration

Pinch sea salt

1 bar (80g) Coconut & Lucuma 74% Cocoa Doisy & Dam Chocolate

 

Method:

Line a baking sheet with parchment or wax paper.

In a food processor, blender, or using an immersion blender, combine coconut, maple syrup, oil, and vanilla.

Blend until a dough forms. Mix with chopped almonds, and form into 10 balls (approximately 1 tbsp). Chill in refrigerator or freezer until firm.

Melt chocolate in a double boiler, or in 20 second intervals in the microwave. Use a fork lower balls into melted chocolate, covering it completely. Top with a halved almond and let cool in fridge.

 

Have leftover chocolate?

Dip fruit, or add chopped nuts and seeds to make a treat for later!
