For the final episode of #D&DdoesGBBO we asked the superdelicious Hayley from Why Go Without to whip up a baking spectacle to make us drooooool.
Presenting: Banana & Choc cake
You will need:
4 eggs, 4 egg whites
250g coconut or muscovado sugar
275 buckwheat flour
50g cocoa powder
2.5tsp baking powder
For the icing:
100g icing sugar
Mash yo 'nanas with a potato masher, or blend and mix in with the eggs until fluffy
In another bowl add thel dry ingredients and use a spoon to mix
Slowly add the dry mixture to the wet ingredients until fully combined
Using an 8” cake tin bake for 40-50 minutes. For a 9” it will take slightly shorter, bake until top is firm and a skewer comes out clean as a whistle
To make the icing, melt the choc in a bowl over a pan on the hob filled with about half 3/4 a glass of water. Stir the choc and once it has all melted into velvety choc, take it off the water and add in the icing sugar and mix well. Then place in the fridge to cool.
Once the cake is cooled, pour on the icing, and then let the eating begin.
