These Lemon chia seed baked doughnuts are absolutely delish and GRAIN-FREE BABY 🎉⭐️ They are perfect if you are trying to go on a bit of a January detox but still need that bit of sweet deliciousness in your life. Plus they only take half an hour! 😮💪 Made with Coconut flour and maple syrup they're also gluten and refined sugar free.

Makes: 8baked doughnuts
60g Coconut Flour
1 tsp Baking Soda
1/4 tsp Salt
75ml Maple Syrup
2 Tbsp Coconut Oil, melted
55ml Lemon Juice
1.5 tsp Lemon Zest
1 tsp Vanilla Extract
1.5 Tbsp Chia Seeds
1 80g bar Doisy & Dam Lemon, Poppy seed & Baobab White Chocolate
First, preheat the oven to 176C and liberally grease a donut pan with coconut oil (Tip: use a paper towel to do this! You can thank us later😘)
In a medium bowl, whisk together the coconut flour, baking soda and salt. Then in a small bowl, combine your maple syrup, coconut oil, lemon juice, zest, eggs and vanilla 👅
Add your wet mixture into the dry mixture, turning it over until it's lovely and smooth. Add in the chia seeds, and keep on stirrin'.
Evenly distribute the batter into the pan (You're aiming to make 8 doughnuts so bare this in mind), and bake for 12-15 minutes, or until golden.
Let the doughnuts cool before taking them out of the pan, and run a knife around the edges of the pan to release the doughnutty goodness
Meanwhile, melt the choc in a double boiler or in the microwave (30 second bursts with breaks for stirring).
Finally, drizzle melted chocolate over doughnuts and ENJOY 💞
