This chocolate dessert created by Kira, personal trainer at MotivatePT, is totally delish with a crunchy texture, and a little peanut hit. The salt from the chocolate bar also adds depth to the flavour and really brings out the chocolate. This recipe will serve 8 (if you can bear to share it!) and only takes 20 minutes to prep, so it’s perfect if you’ve got a dessert craving after dinner and want something a little fancy, but don’t want to wait too long!

2 80g bars Doisy & Dam Maple, toasted rice & Pink Salt chocolate
1 ¾ cups mixed nuts, chopped roughly
2 teaspoons vanilla extract
¼ cup peanut butter
1 tablespoon coconut oil, melted
Line a loaf tin with parchment paper.
In a food processor, or by hand, chop roughly the mixed nuts. Add the peanut butter and vanilla extract until the mixture holds together.
3. Transfer this mixture to the tin and ensure it is tightly packed in. Place in the fridge for around 20 minutes, until it is firm.
4. While the mixture is setting in the fridge, melt the chocolate and combine it with the coconut oil.
5. Place the remaining nut mixture on top of the chocolate and drizzle the rest of the chocolate onto this. Sprinkle with some chopped nuts and sea salt and place back into the fridge, for at least 2 hours.
6. To serve, slice in to bar shapes – however big you like them!
