Maca & Vanilla Mousse Pots

Serves 4 INGREDIENTS:

80g Doisy & Dam maca, vanilla and cacao nib dark chocolate
1x 250ml carton of coconut cream, chilled overnight (or the top of a can of full fat coconut cream)
1 tsp pure vanilla extract
1 tbsp maca powder
3 tbsp rice milk
2 tbsp cacao powder
Pinch of salt
1 tbsp cacao nibs
2 tbsp coconut chips

METHOD:

●  Start by melting the chocolate in a bowl over a saucepan of simmering water

●  Once melted, take the bowl off the heat and place it to one side to cool

●  Add the coconut cream to a large bowl and whisk it for 2 minutes with an electric whisk (this will make it thick and creamy)

●  When the chocolate has cooled add it to the bowl with the vanilla, maca, rice milk,cacao powder and salt

●  Whisk again for a further minute so that everything is evenly combined

●  Divide the mousse mixture between 4 ramekins

●  Sprinkle over the cacao nibs and coconut chips

●  Place the ramekins in the fridge to set for at least an hour before serving
