Cheesecake Brownies


80g Doisy & Dam Buttons

75g unsalted butter

125g caster sugar

1 tsp vanilla extract

50g plain flour

2 eggs

40g Doisy & Dam Ballers

100g light cream cheese

1 tsp vanilla extract

10g caster sugar


Squidgy. Chocolatey. Delicious. These cheesecake brownie bites are all your dream snacks rolled into one. Created by the incredibly talented Fran (@leekslentilsandlove). Perfect for when the nights start drawing in. 

20 minutes prep time + 25 minutes baking.

Serves 12.


1. Preheat the oven to 180C.

2. Break the dark chocolate into chunks and then place in a heatproof bowl with the butter. Put into the microwave for 30 second bursts until the chocolate has melted.

3. Crack one of the eggs into the bowl with the chocolate, then crack the other into a mug. Use a fork to whisk up the egg in the mug, the pour half of it into the chocolate bowl. Save the other half for later.

4. Add 125g caster sugar and 1 tsp vanilla extract into the bowl with the chocolate and beat with a wooden spoon until the mixture is glossy and smooth.

5. Sieve the flour into the bowl and stir to combine.

6. Pour the brownie batter into a lined baking tin, then sprinkle over the Ballers. 

7. To make the topping, beat the cream cheese in a clean mixing bowl with the remaining egg, vanilla extract and caster sugar until smooth. Pour the cream cheese topping over the brownie batter and use a knife to carefully swirl the two mixtures together. 

8. Bake in the oven for 25 mins, then allow to cool.
